Ingredients for 4 people

  • 500 g of clean Monalfungo champignon mushrooms
  • 2 eggs
  • 200 g of fine corn flour (“fioretto”)
  • 100 g of grated parmesan
  • Parsley
  • Peanut oil for frying
  • Salt to taste

Preparation method

Preparation time 30 minutes, low difficulty

  1. Cut the mushrooms into 1 cm thick slices. Wash and dry the parsley.
  2. Beat the eggs in a bowl. Mix the corn flour with the grated parmesan and the finely chopped parsley.
  3. Dip the mushrooms in the beaten egg and then in the flour mix.
  4. Fry few mushroom slices at a time in plenty of oil. When they are golden brown, remove them from the pan with a slotted spoon. Let them drain on kitchen paper, season with a pinch of salt and serve hot.
