Roast pork loin with champignon mushrooms


  • 400 g of pork loin
  • Breadcrumbs 
  • Extra virgin olive oil
  • Salt
  • 600 g of sliced champignon mushrooms Monalfungo
  • Parsley
  • 1 clove of garlic


Preparation time 45 minutes, medium difficulty

  1. Remove the excess fat from the loin. Then massage the oil into the meat.
  2. Coat the meat with the breadcrumbs making sure that the meat is well covered. Line a baking sheet with parchment paper, grease it with a drizzle of oil and place the loin on it.
  3. Bake at 200 degrees for about 30 minutes. Halfway through the cooking add salt and turn the meat.
  4. Put the champignon mushrooms in a pan with two tablespoons of oil and the garlic clove cut in half. Once the garlic is golden, add the mushrooms, salt and cover with a lid.
  5. After 5 minutes remove the lid and continue cooking for 10 minutes.
  6. When the loin is almost cooked, add the mushrooms to the tray and cook for a few more minutes. Add the chopped parsley and serve.
