Roast pork loin with champignon mushrooms
PREPARATION METHOD
Preparation time 45 minutes, medium difficulty
- Remove the excess fat from the loin. Then massage the oil into the meat.
- Coat the meat with the breadcrumbs making sure that the meat is well covered. Line a baking sheet with parchment paper, grease it with a drizzle of oil and place the loin on it.
- Bake at 200 degrees for about 30 minutes. Halfway through the cooking add salt and turn the meat.
- Put the champignon mushrooms in a pan with two tablespoons of oil and the garlic clove cut in half. Once the garlic is golden, add the mushrooms, salt and cover with a lid.
- After 5 minutes remove the lid and continue cooking for 10 minutes.
- When the loin is almost cooked, add the mushrooms to the tray and cook for a few more minutes. Add the chopped parsley and serve.
